This was a quick and easy dinner I threw together so we could get to our Home Group on time – I got the idea from Kelley Velasco. The neat thing is, you can serve this on greens for Stage 1 or on healthy bread or whole wheat pita for Stages 2 and 3. This recipe makes a lot. I did it quick and dirty with canned chicken (wait…what?), but cooked shredded chicken breast would be better.
Of course, you can change it up anyway you’d like but make sure and put a little something sweet and something crunchy according to your tastes – grapes, green/red peppers, onions, nuts, etc. Sometimes adding curry powder can really take chicken salad up a notch.

Chicken Salad…Salad
2 large cans of chicken, drained
1 apple, peeled and diced small
1/2 large cucumber, diced small
1 stalk celery, diced small
1/2 - 3/4 cup olive oil mayo
Salt and fresh ground pepper
toppings: walnuts, avocado and tomato
Combine the chicken, apple and veggies in a large bowl. Add just 1/2 cup of mayo and combine. If you’d like more mayo, keep adding until you get the consistency you want. Season with salt and pepper.

ReplyDeleteThis is a wonderful recipe! The addition of an avocado, tomato and walnuts, although not manditory, makes it even better and the salad is moist enough so no additional dressing is needed even with a full bowl of salad.
ReplyDeleteWe sometimes add in an extra apple (if they are small) and use Miracle Whip instead of Mayo for more of a tangy taste.
This is now a favorite lunch staple for us!
